The Bird Southern Table & Bar - Media Tasting

Marina Bay Sands has teamed up with 50 Eggs to unveil its first Asian venture, the James Beard nominated and award-winning Yardbird Southern Table & Bar, operating under the name The Bird Southern Table & Bar. Bringing authentic U.S. Southern cuisine and hospitality, the casual American diner boasts the use of farm-fresh ingredients in all its dishes. The 190-seater two-storey restaurant serves Southern classic dishes, including the famous 100-year-old recipe Lewellyn’s Fine Fried Chicken, Shrimp 'N' Grits, Buttermilk Biscuits, and Butter Lettuce and Grilled Mango Salad.

Inspired by the Southern United States, The Bird incorporates modern-rustic design with industrial touches. The restaurant uses familiar textures and colors signature to its flagship location, including accents of reclaimed wood, recycled machinery parts and mason jars. The open-kitchen concept allows diners to peek at skillful chefs meticulously crafting out dishes using freshest of ingredients.

For this Media tasting, we sampled the "Prix Fixe Menu", a new 3 course set dinner for 2pax (coffee & tea included), for an attractive price of S$65++. The menu consists of 2 appetizers, 1 main course with 2 sides, and one choice of dessert.

While dinner was being prepared in the kitchen, the friendly host served us premium bottled water and Amuse-Bouche (fresh oysters topped with seasoned chopped apples). These were fabulous.

Appetizers

Deviled Eggs
dill, chives, smoked trout roe

Fried Green Tomato BLT
house smoked pork belly, pimento cheese, frisée, smoky tomato jam, lemon vinaigrette

Both were amazing to look at and tasted great too. The Tomato BLT was my fave dish of the day, I loved the smoky flavored and tender pork belly that combines excellently with the fresh crunchy tomato covered in crispy batter. Thumbs up!

Mains & Sides

Chicken ‘n’ Watermelon ‘n’ Waffles
chilled spiced watermelon, vermont sharp cheddar cheese waffle,
bourbon maple syrup, honey hot sauce

Macaroni & Cheese
torchio pasta, five artisan cheeses, crispy herb crust

Classic Buttermilk Biscuits
honey butter, house-made jam

Butter Lettuce & Grilled Mango Salad
char-grilled mango, smoked pecans, tomato, onions, benne seed dressing

The Buttermilk biscuits (not in the set menu) were served as I don't take cheese dishes (the waffles & Mac n' cheese). These are made fresh every 15mins and served hot straight from the kitchen. The Mango salad tasted pretty refreshing, and the gooey Mac & Cheese was well received by my friend who is a fan of everything cheesy.

The star dish of the restaurant, the 100-year-old recipe Lewellyn’s Fine Fried Chicken, brined and marinated for 27 hours before frying in pressurized cooker, ensuring evenly cooked meat without losing its moisture. The chicken skin was super crispy and meat was tender and flavorful, it's delicious. The bourbon maple syrup was fairly potent too, with an evident kick of alcohol taste in it. This was supposed to compliment the savory cheese waffles but I had the buttermilk biscuits with it, I'm quite happy with the combination.

Desserts

Cafè Crème Brûlée
almond orange biscotti, orange gremolata

Banana Pudding
rum soaked banana cake, chantilly cream, fresh bananas, vanilla wafers

We got to try both the desserts. While the Creme brulee was good, I personally prefer the Banana pudding for its light-as-air chantilly cream topping and soft creamy bananas, a sweet conclusion to the 3 course meal. Last but not least, a cuppa coffee to end the enjoyable dinner.

Guests looking for a perfect spot to host intimate events can also choose between a private dining room that can be configured into two rooms for 6 to 10 people, and a 30-seater semi-private dining room.

If you like to chill over drinks after dinner, head to the alfresco bar by the waterfront (upper level) and be spoiled for choice with hand-crafted cocktails such as the Blackberry Bourbon Lemonade and Watermelon Sling.

We had a wonderful evening trying out the Prix Fixe Menu, highlighting the most popular signature dishes from different categories on the Ala carte menu. These dishes, if ordered separately, could cost a bomb, so it makes sense to order the set dinner and pair it with side orders of smaller dishes to complete the meal. Highly recommended for folks who are fans of Southern American cuisine.

X'mas Festive Dinner at Kotobuki @Wisma

We had a year end festive feast and birthday celebration with evil sister at Kotobuki Japanese restaurant at Wisma Atria. This was a last minute decision as the birthday girl didn't have an idea where to dine, until we stumbled upon this FB sponsored ad. The Festive Set meal was $82++ and comes with a complimentary bottle of sparkling sake, sounds like a good deal!

The Izakaya style restaurant was tucked away in a quiet corner of level 1 at Wisma Atria. It has an intimate dining atmosphere. We were given a private dining space for the birthday celebration. 👍👍

We pre-ordered the Festive set during the reservation, and was served the complimentary sake immediately after being seated. We then explored the menu and picked out 3 side dishes to go with the set meal.

The Festive set comes with a lovely 16pcs Assorted Sushi platter, a Mixed Tempura basket and a Sashimi platter with 3 kinds of fish and scallops. The food was pretty delicious despite its smallish portion meant for 3-4pax.

The 3 side dishes we had were Tori Karaage $9++Gyoza $7++ and Dashimaki Tamago $6++. They are more reasonably priced as compared to other main dishes in the Ala carte menu, and taste good too.

Kotobuki serves delicious Japanese cuisine in a cozy environment with warm friendly service staffs. The Ala carte menu is rather pricey and would burn a hole in your pocket if there isn't an ongoing promotion. Nevertheless, we enjoyed having dinner here and would come again if we spot another value for money promo.

Paradise Hotpot 品樂鍋 - Tea Time Indulgence promo

With the completion of the major revamp works of Compass One, Paradise Group has returned with 3 restaurants opening at level 3 of the mall. Other than Canton Paradise, the other two are new outlets, LeNu and Paradise Hotpot. Paradise Hotpot is a brand new HK style individual hotpot concept offering an impressive range of 14 choices of soup bases.

The restaurant serves a wide variety of fresh ingredients similar to their popular concept Beauty In The Pot, but without the Shark Cartilage soup. Orders are taken via the tablet, many items are available in half or full portion as well.

The soup bases are reasonably priced at $3.50++ to $9.80++ per pot. However, the Ala carte ingredients aren't cheap and could quickly add up to an expensive bill. Try to order half portions and re-order extras if serving is small. Or alternatively, go during off peak hours (Mon - Fri, 3pm - 5pm) to enjoy the Tea Time Indulgence 50% discount on ingredients (excl. soups, drinks & condiments).

Condiments are DIY mix-your-own-sauce concept, the current trend for many steamboat places. There is a $2++ charge per head for the condiments. Ice water is also chargeable at $0.30++ per pax and it's refillable.

The individual hotpots were served in glistening golden pot-holders. The servers will first fire up the pots with a blow torch, then mini pots of soups will be placed over the fire.

Teochew soup $3.50++ & Tomato Sweet Corn soup $3.50++

The soups were really flavorful on its own and the flavor intensifies after cooking a myriad of ingredients in it. When it becomes really salty, it's time to ask for soup refills to dilute the taste.

Fresh Sea Prawns $22++

Lotus Roots (Half) $2.50++, Dace Fish Balls (Half) $4++, Assorted Balls platter $11++ & Shrimp Dumplings (Half) $6++

Cuttlefish Paste $10++ & Ebiko Prawn Paste $12++

Pork Belly slices $14++

Ramen $2.70++ & Tianjin Cabbage (Half) $3++

Sweet Corn (Half) $3++ & Winter Melon slices (Half) $2++

The ingredients are not only fresh but of high quality. My fave are the handmade seafood pastes, the cuttlefish paste was super springy and prawn paste utterly crunchy...amazingly good! The shrimp dumplings are must order as well. Basically, everything we ordered was great, period.

With the 50% discount on ingredients, our original $136 bill was reduced to $74 only, very worth it! We will definitely be back for more steamboat fix as long as the tea time promo is still on. Having said that, during non promo hours, you do enjoy better service. Serving staffs would offer aprons, plastic covers for smartphones and prawn peeling service etc. like at HDL. Overall, it is a great place to go to for good quality steamboat meal, just need to plan your visit according to your budget.
